Savernake Knives makes kitchen knives by hand in a workshop in Wiltshire. By its own account, the whole job happens there, from picking out the steel to putting on the final edge. That includes the heat treatment: the blades are hardened in-house to 60 HRC, with a nitrogen atmosphere and cryogenic treatment. The steel itself is a Swedish grade called 14C28N.

The kitchen knives

Chef's, santoku, nakiri and paring knives, each made by hand in Savernake's Wiltshire workshop from Swedish 14C28N steel and hardened there too.
